Lisa’s Energy Bars

So after last week’s granola recipe, I’m sure you’ve been waiting by your computer for this one.  You won’t be sorry, this is a good recipe.

When the kids were all little I needed a way to feed them something quick and affordable in the car.  I hated the Goldfish crumbs and petrified french fries I’d find on the floor in the back of my super cool mini-van.  So I messed around with recipes and finally came up with this, which everybody loves!

Now I want to say up front, it has sugar in it, so I’m not claiming them as healthy.  But you have control over the amounts and it’s something worth playing around with if you need good snacks for the kids.

Lisa’s Energy Bars

1/2 C packed brown sugar
1/2 C corn syrup
1/2 C peanut butter
3 1/2 C granola
1/2 C peanuts

In a saucepan, bring the brown sugar and corn syrup to a boil, stirring constantly.  Remove from heat and add the peanut butter, stirring until blended.  Add granola and peanuts and stir to coat.  Press into a buttered 9″ square pan and allow to cool.  Cut into bars.  Store in an airtight container for up to 7 days.

That’s it…easy easy easy.  And it’s great to take for an addition to a meal you take to a sick friend or recently had a baby.  These are perfect for breakfast, snack or lunch.

  1. My kids love home made granola bars.

    I would substitute brown rice syrup for the corn syrup but otherwise, it sounds yummy! We are big peanut butter fans in our house!

  2. OH my mom made rice crispy treats using the same mixture when I was a kid. In fact I had no idea that everyone elses “rice crispy treats” were different. Imagine my surprise the first time I had “real” rice crispy treats! ha ha! These do sound delicious!!

        WHERE HAS YOUR TUMMY AND TASTE BUDS LIVED ALL THIS TIME?!

        I cannot recall the last time I made ‘normal’ rice krispies. I’ve always made them with peanut butter. Now that I’m gluten free, I use rice GF Chex to make chex krispy bars, and even then, I still add my peanut butter to them. …and now I add peanuts too, cause you can never have too much peanut. (unless you’re allergic to peanuts, but that’s a whole different story there)

  3. Lisa, these sound really good! Yes, of course, there’s sugar in them, but at least it’s not tons of sugar, right?

    Question: do you always make these using your already-made granola? Have you ever tried making them with just oats that you’ve pre-toasted?

    1. Hey Richella, Thanks for the comment on my energy bar post. I have only ever used my own granola, but I don’t know why you couldn’t just do oat bars and do it like you said. It’d be worth a try! They really are yummy! Lisa~

  4. Ok, I didn’t add the peanut butter, because I made the granola with dried fruit pieces and I wasn’t sure how the flavors would mingle. I added chocolate chips as well (I know, not super healthy, but the goal is to get my hubby off store bought and onto homemade).

    I’ve tried several granola recipes and most of them call for strange things and we don’t end up liking them. I halved your recipe, as there are only 2 of us and 8 cups of oats sounded like a lot. I also added the dried fruit because we didn’t have sunflower seeds. It made enough to make the granola bars and have some left over for eating. The little bit I tried of the bars were great! Jury still out on the hubby, he gets home later 🙂
