Where’s the Beef?!

You know the phrase….”When life gives you lemons, make lemonade!”

Well what do you do when life gives you beef….and lots of it?

My two (count ’em….two) upright freezers are completely packed with cuts of beef in all shapes and sizes. Really, you’d think we were kings and queens around here. On Sunday night we had steak. All eleven of us. Just because we could.

So tonight, as I make dinner for fourteen of my closest friends (OK, it’s a Board Meeting so they’re all forced to come, whatever) I will make beef. Beef stew to be exact.

There are a couple of vegetarians in the bunch. What do I do with that?! I have beef. That’s probably not on their diet.

Here’s a question for you….

If vegetarians eat vegetables, what do humanitarians eat?

Hoo hoo ha ha ha. I crack myself up.

I will make my delicious lentil soup for my veggie friends. It’s a winter staple around here. It’s hard to give you the recipe because I kind of just throw it together. But I’ll try.

Lisa’s Lentil Soup

Chop celery, carrots and onions. Toss them in a pot with a little bit of hot oil and some salt and pepper.

When the onions are almost done add minced garlic and a few cups of rinsed lentils, a bit more salt and pepper.

Stir for a few minutes and then add three or four cans of chopped tomatoes and a bunch of chicken broth.

Let it simmer all afternoon. You will have yummy, inexpensive soup for dinner and your house will smell heavenly.

We sometimes add sausage, but for my vegetarian friends I will leave it out. I’m thoughtful that way.

The carnivores of the group will have beef stew. Also on the menu is yeast rolls, chocolate cake and apple pie a la mode. How’s that for a winter meal?
